Three Healthier and Appetizing Dinner Meals
Whether cooking for yourself, or for an entire family, it is important to be able to cook a healthy meal that is rich in nutrients, fiber, and tastes good. Here are three meals that are healthy, fulling, and will appease the entire family:
1.) Vegetable Quesadillas (for 4 people)
-all you will need is: a 1/2 cup of sliced bell pepper, corn, sliced onion, slices tomato; 4 flour tortillas; and 1 cup of reduce fat cheddar
First spray a medium skillet with nonstick cooking spray. Sauté bell pepper and corn until softened. Then, Add green onion and tomato; cook for several minutes more
until heated through. Next Heat tortillas in a large skillet over high heat. Place equal amounts of cheese and vegetables on each tortilla; fold in half and continue to cook until cheese is melted and tortilla is
crisp and lightly browned. Serve while hot.
2.) Potato Spud Stuffers
-All you will need is a potato, fat free sour cream, and anything you want to stuff you spud with (bacon, broccoli, fat free cheese, bell pepper, etc)
First, wash potatoes and pierce 3 times with a fork. Microwave on high for about 6 minutes. Turn potatoes over and cook on high for 10 minutes more. Or, bake in the oven at 400°F for 45 to 60 minutes. Then, when cooked, carefully cut potatoes open on the top. Place1 tablespoon sour cream on top of each potato. Top each
potato with one of the toppings of your choice.
3.) Fish Tacos (for 4)
-All you will need is1 pound cod or whitefish fillets, cut into 1-inchpieces; 1 tablespoon olive oil; 2 tablespoons lemon juice; ½ package taco seasoning;12 (6-inch) warmed corn tortillas;1 cup shredded red cabbage; 1 cup shredded green cabbage; 2 cups chopped tomatoes; ½ cup nonfat sour cream; taco sauce to taste
First, in a medium bowl, combine fish, olive oil, lemon juice, and
seasoning mix; pour into a large skillet. Then cook, stirring constantly, over medium-high heat for 4 to 5 minutes or until fish flakes easily when tested with a fork. Then, Fill tortillas with fish mixture. Finally, top with cabbage, tomato, sour cream, and taco sauce.
